If you are starting Dialysis

My dad needed to start dialysis a number of years ago. My mother struggled to make him meals that were interesting and flavorful, while still following the restrictions of a dialysis diet. Here is a video explaining those restrictions:

Understandably my dad, who was a real meat and potatoes kind of guy, balked at his sudden diet of lean meats and no potatoes. He said if he had one more piece of baked fish he was going to explode. My mom was at her wits’ end. I wish so much that we had had the choices offered by MagicKitchen.com’s new complete meals options.

My dad is since deceased, and my mom no longer has to cook for his needs. But she herself is tired of cooking for herself and eats lightly. These meals are really good and provide all the ingredients for a healthy diet, while being portioned for a realistic diet (not the massive portions that you get in restaurants).

Here are some pictures of the meals.

Tilapia with Lemon Pilaf and Grilled Peppers & Onions
Tilapia with Lemon Pilaf-My mom never cooked fish like this! Sorry, mom.

Shrimp in Garlic Sauce over Vermicelli-Mom loves shrimp, she adores this.

Chile Colorado
Chile Colorado with Mexican Rice. My dad loved Mexican food, he would have gone crazy for this.

Stuffed Bell Pepper with Spanish Rice
Stuffed Bell Pepper with Spanish Rice-Yummy and filling, right, dad?

Turkey Breast with Cranberry Pilaf
Turkey Breast with Cranberry Pilaf - a little turkey dinner, mom thinks this is perfect.

Chicken Stir Fry
A quick stir-fry of tender white chicken meat, a delicious sauce, and vegetable fried rice. Just the kind of light meal my mom likes now.

Not to be maudlin, but seeing these meals available makes me wish my dad were still around to enjoy them. Good meals, Bon Appetit!
