Start a New Tradition with a Summer Solstice BBQ

As always, let’s start this post with some topical background information regarding the upcoming summer solstice…I figure it’s not needed for a barbeque.

Many people consider the summer solstice to be the start of summer while some in the northern hemisphere refer to it as midsummer (such as Will Shakespeare and his “Midsummer Night’s Dream”).  So what is a “solstice,” (it’s derived from the Latin words sol = sun and sistere = to stand still) exactly, and why does it always occur between June 20th and 22nd?

The existence of the solstices and equinoxes (there’s two of each, every year) is tied to the fact that the Earth does not float vertically in the vast expanse of space.  If you draw a line through the Earth, from pole to pole, that line is not straight up and down.  It’s tilted 23.4 degrees.  In other words, the earth is tilted 23.4 degrees on its axis.  And that tilt is why we have four seasons and their related solstices and equinoxes.

In the northern hemisphere, where I assume the vast majority of my readers live, we experience the warm summer months when the Earth is tilted towards the sun and the cooler winter months when it’s tilted away.  And while the Earth’s orbit around the sun is not a perfect circle, but rather elliptical (or egg-shaped), which causes our distance from the sun to vary, this distance, or lack-there-of, has nothing to do with our seasons.

Now, back to the summer solstice and what it is.  Due to that 23.4-degree tilt, the summer solstice is the exact time (this year it’s 12:24 AM on June 21st) when the sun reaches its most northern position, in this case, the Tropic of Cancer.  The winter solstice is when the sun is at its most southern position, or above the Tropic of Capricorn.  Thus, the Tropic lines are exactly 23.4 degrees away from the equator.  Isn’t math fun?

That is why, in the northern hemisphere, we get the greatest amount of daylight during the summer solstice.  In fact, the Arctic Circle will get 24 hours of daylight, Anchorage, Alaska will receive over 19 hours; Seattle, Washington almost 16 hours; Washington D.C. almost 15 hours; Miami, Florida 13 hours and 44 minutes; and Ushuaia, Argentina only gets 7 hours and 12 minutes of daylight.

March is National Nutrition Month

National Nutrition Month is upon us yet, again. Yes, March is here already. It seems like yesterday I was just reminiscing about great foods for Fall. At that point, I was taken back to when I was a kid and all the unhealthy things we would eat. When I was little, it didn’t matter if it wasn’t good for me. I just wanted it to taste good. Food from the county fair, Halloween, and football never seemed to be healthy. Funnell cakes, chocolate candy in my Halloween bag, and chili dogs were all yummy. They certainly weren’t pictured on the Food Pyramid.

I have to admit that the chili dogs weren’t just something I’d get only during football season. There was this great little family run country store out by my grandparent’s house. We’d go there as a treat and order a chili dog, fries, and a soda. The drinks were in glass bottles, right inside a frosty cooler. The sounds of deep fat fryers and the POP! of a refrigerated cooler door can take me back to those moments in an instant. I didn’t care how many calories and fat I was ingesting on those days. Nutrition? Who cared? It’s a different story these days.

Why was it ok then? Probably two reasons. First, we only ate like that a couple of times a year, and sodas were treats we’d get maybe once a week. Two, as kids we were way more active, out on the streets until sundown, playing and running around. But that can cause problems later in life, when we get more sedentary and still eat the same bad things. So learning good nutrition young is the focus.

Nutrition is thought of as the way food is brought in and turned into energy for the body. We seem to do all we can and discover ways to either stay healthy or get that way. Exercise and having an optimal body weight are key components to being healthy. The essence of this year’s National Month of Nutrition is “Put Your Best Fork Forward”, focusing on the fact that we are ultimately responsible for our own nutritional needs and we have the tools necessary to achieve optimal nutrition.

aloneThere has been quite a bit of recent attention devoted to the benefits of living alone (remember, being alone is NOT the same as being lonely). Studies now reveal that one in four households in America contain only a single individual and in Manhattan that ratio jumps to one in two.

This growing popularity in living alone is borne out by the arrival of books (Eric Klinenberg’s Going Solo: The Extraordinary Rise and Surprising Appeal of Living Alone) and websites (quirkyalone.net) devoted to this growing trend. And one area that receives a great deal of attention among aloneists (made up word) is eating and the joylessness of preparing meals for one.

Yes, while living alone you can pretty much do as you please without having to worry about pleasing anyone. Vacuum naked? Have at it. Endlessly practice your beat box technique? Knock yourself out. Hold conversations with yourself? You and yourself will be the only ones who know.

Most people prepare meals with others in mind, usually friends and/or family and cooking for one every night loses its appeal quickly. Picky, Picky, Picky

Picky eaters…we all have either been one, will be one, or know someone who is currently picky about what they eat. There are so many different factors that make people picky eaters. They could have started life just not liking the flavor of much, maybe the textures of certain foods drive them away, or maybe lack of adventure has left them only having a palate for the tried and true.

Regardless of the reason, when a medical condition, such as diabetes – either type 1 or type 2, is added on, things become even more difficult at meal and snack times. One thing that we need to realize is that not all picky eaters are children. Many adults are as well. How can one combat this issue and break out of the “ho hum” routine? Here’s some tips on making meal time livelier.

  • Consider new recipes. With the world essentially at your fingertips, it has become so easy to find new ways to cook. Searching the Internet for diabetic friendly meals brings up a ton of different pages. Pinterest is always a great resource, as is Allrecipes.com. They both have hundreds of recipes to help bring new tastes to your palate.

    For those with young picky eaters, consider having them help you cook. Start from the very beginning by taking them to the grocery store. Have them pick out the ingredients for a meal. When preparing dinner, let them do the chopping if they are old enough. Most kids are happy to pour things into something else, and they love to stir. By allowing them to do this, they are more likely to try new things. It also teaches them to cook, which is a great skill to have.

  • Let them know that it’s okay not to like certain foods, but they still need to eat healthy. Leave the diabetes out of it. Their palates will change as they grow older. If they aren’t getting enough protein, offer them a chocolate protein shake. Toss in some fruit with a vanilla protein shake. Switch it up, let them help you make it.

5 Food Myths Busted and/or Debunked (Your Choice)

I’ve never understood the use of “busted” and “debunked” when referring to the process of proving a previously held belief (myth) to be false.  In my youth, “busted” meant being caught by some authority figure in an act of wrongdoing, such as placing 47 “for sale” signs in the yard of a “friend” in the middle of the night while being observed by said friend’s neighbor who happened to be a local police officer.  And “debunked” sounds like the act of exiting a bunk bed, as in “When her boyfriend burst in I debunked in world record time.”…but that’s another story for another time.

Fresh produce is healthier than frozen.

wiltedActually, depending upon how long the produce has been sitting around, the exact opposite is true.  As fruits and veggies age, in a warehouse, the produce section, or in your fridge, their sugar content increases as their nutritional content declines.  So long as they are frozen soon after they’re picked, frozen veggies and fruits can actually have MORE nutritional value than those that have been languishing for days or weeks prior to being consumed.

Eggs, especially the yolks, are bad for you.

eggsActually, people have climbed out of their bunks (see: debunked above) on this one years ago.  Yes, egg yolks are high in cholesterol, but that doesn’t necessarily mean they’re going to raise your blood cholesterol levels.  Well, let me re-phrase that…studies have shown that eggs actually raise the levels of your “good” cholesterol (HDL).  They also are low in calories at around 75 and high in protein (6-8 grams).  They also contain essential amino acids as well as lutein and zeaxanthin which promote eye health, and choline which supports brain health.  So next time, go crazy and use the whole egg when making your omelet.

Oranges are the best source of vitamin C.

strawberriesLook, I’m not saying oranges aren’t a great source of vitamin C.  However, there are other, lower-calorie sources of this essential vitamin that we can’t store or produce and that supports our immune system and helps build collagen for healthier skin.  An average sized orange gives us 70 micrograms of vitamin C with 70 calories that tag along for the ride.  Compare that to these other sources that provide the same amount of vitamin C:  1 cup of Brussel sprouts (I know, they taste horrible and I cursed the Belgian city that they’re named after every time I was forced to eat them) at 40 calories; 7 strawberries at 40 calories; ½ stalk of broccoli at 25 calories; and ½ a red bell pepper at 20 calories.

Meat is bad.

brisket-saucedThis broad myth simply needs a qualifier: processed meat is bad.  Pork, beef and lamb offer complete proteins, as well as vitamin B12 which helps us build red blood cells and promotes healthy brain activity.  Studies have recently found that unprocessed lean cuts of meat present zero risk of heart disease or diabetes and in no way increase your risk of kidney disease unless you have a pre-existing condition.  So, to sum up, avoid processed meats, such as bacon, sausage, Slim Jims and deli meats such as bologna…my bologna has a first name…I’d never be able to spell it without that kid.  And consume lean cuts of meat such as eye of round and top sirloin (I dub thee Sir Loin of Beefshire) cuts of beef and pork tenderloin or loin chops.

I swore off Southern Comfort way back in 1988 due to the fact that every time I consumed it I lost my mind (and memory) and usually woke up in a strange place with a strange person (or people) the next morning.  I was convinced that these varied humiliations had to do with neither the amount I consumed, nor the rate at which I consumed it.  It was simply the fact (myth) that Southern Comfort “…was some wicked stuff.”

As a former member of the United Kingdom’s Medical Council on Alcohol, Dr. Guy Ratcliffe, recently stated, “The effects of alcohol are similar, whichever form they come in.  Any difference is dependent on the rate at which it is drunk and the amount.”  Yes, by volume tequila contains more alcohol than red wine, but at crucial times we tend to forget that…usually to our lasting detriment.

So, don’t feel guilty about feeding frozen veggies to your kids, eat a yolk for God’s sake, realize there are other sources of vitamin C, enjoy some unprocessed red meat, and come to understand that the over indulgence of tequila or that fruity chardonnay can both cause you to awaken in a strange bath tub with all your clothes on backwards…but that’s another story for another time.

The Logistics Behind Prepared Meals Delivered

Most people who have availed themselves of our services here at MagicKitchen.com know that we deliver nutritious and delicious meals right to your door.  They know that we provide prepared meals that meet a wide variety of nutritional requirements, to include diabetic and dialysis friendly, gluten-free, low-carb, heart healthy, and low sodium.  What many of our customers do not know is the logistics involved in the meal delivery business and how we strive to keep transportation costs down.

As they say in real estate, the top three things to consider when buying a property are location, location, and location and we did just that when we located our warehouse facilities in Kansas.  Why Kansas you ask?  Due to its centralized location within the lower 48 states, Kansas saves us, and thus, you, on shipping costs.  It matters little whether we ship to either coast, southern Texas or the upper peninsula of Michigan, shipping costs are kept to a minimum.

After our chefs have prepared and cooked your healthy and appetizing meals, they are quickly flash-frozen to lock in the essential vitamins, minerals and taste that you have come to expect.  Obviously, they must be kept in that frozen state as they are shipped to your door and that requires dry ice (which is simply carbon dioxide in solid form, FYI).  The inclusion of dry ice adds to the weight of the shipment which adds to its cost as well.  However, if you live in a warmer climate, say southern Florida or California, we add extra dry ice to the packaging to ensure your meals stay frozen at no additional cost to you.

Disadvantages of Seniors Living Alone

The phases of life provide many challenges. Growing up and living alone has to be the most exciting. However, as we grow older, often we can no longer be independent as we once were. Frozen Food is as Healthy as Fresh!

frozen berriesAnd sometimes frozen produce is even healthier. That fact flies in the face of the common misconception out there that fresh produce from your supermarket is somehow healthier than frozen, and that’s simply not true. In fact, two recent studies conducted in Britain found that some frozen fruits and vegetables were “…richer in health-boosting vitamins and antioxidants.” These studies found that, for example, frozen broccoli had four times the beta-carotene and frozen carrots had higher levels of vitamin C and polyphenols than their “fresh” counterparts.

What the British studies, and similar studies conducted by Rice University and the University of California at Davis discovered was that “fresh” does not always equate to picked yesterday. Supermarket produce is almost always picked prior to becoming ripe and permitted to ripen in storage and during shipment. Thus, these fruits and veggies were picked weeks before they reach your kitchen and the longer they sit off the tree, bush, vine or out of the ground, the more nutrients they lose.

Think of this as cryogenic freezing that keeps the produce perpetually young, immortal, if you will, until it’s thawed and ultimately enjoyed.

The nutrient studies cited above also found that florescent lights, such as those in a supermarket, and the darkness of your fridge, where much of your produce sits for days prior to being consumed, can screw with the circadian clocks of the fruits and veggies. This healthy eating plan gives you a visual of what to eat to manage your diabetes. Half your plate should include non-starchy vegetables like carrots, cauliflower, broccoli, and tomatoes. Some healthy protein (turkey makes the list), whole grains, and starchy vegetables are good for you too. Follow this basic plan, and you’ll be on track to control calories and limit carbohydrates, important for managing diabetes.

After filling half your plate with vegetables, be sure to enjoy a serving of turkey. It’s high in protein and doesn’t contain carbs that can elevate blood sugar levels. But a serving is all you really need, which is about the size of your palm. If you’re cooking the turkey, it’s healthier to roast it in the oven than deep fry it. And when it’s ready to eat, remove the skin, which contains a lot of calories and fat.

Sample the Stuffing
If you’re a true traditionalist, you can’t have a Thanksgiving meal without stuffing. But if you have diabetes, you’ll probably only want a small sample of stuffing. Why? It’s generally made with white bread and is high in carbohydrates. If you’re in charge of making the stuffing, use whole wheat bread and add more non-starchy vegetables to the stuffing mix. Doing this will make the stuffing more diabetic-friendly, take longer to digest, and do a better job at regulating blood sugar levels than traditional stuffing.

Pay Attention to Potatoes

If you showed up as a guest at the first Thanksgiving, potatoes weren’t on the menu. Yet today, mashed potatoes and gravy, and sweet potatoes are a common side dish that goes with the turkey.
