Our dessert “bundles” offer a delicious variety of different desserts for a variety of different people. Entrees
First, a quick word about the French cooking technique, “sous vide,” which we offer with some of our beef entrees. Sometimes referred to as “long time, low temperature” (LTLT) cooking, the literal translation is “under vacuum” and it’s the process of placing meat, usually beef or poultry, in a sealed bag (along with herbs and spices) and then cooking the meat to a precise temperature in a hot water bath over a long period of time, usually 1-7 hours. This ensures the meat is evenly cooked, that it cooks in its own juices, and comes out juicy and tender as the longer cooking time breaks down the meat fibers.
We currently offer four sous vide entrees: balsamic BBQ pork shank, boneless braised beef short ribs, braised lamb shank and veal osso bucco (a Milanese dish in which our shank is cooked with a veal demi-glace). Read more about our sous vide dishes here.
