I love spring and summer, meals are so light and fresh tasting. Here are five more ideas for easy ways to make our dishes into light summer dishes.
Fast and Easy Barley Salad

1- stalk celery, sliced thin
1- green onion, sliced thin
your favorite bottled vinaigrette, such as Newman’s Own, to taste.
squeeze of fresh lemon juice, optional
Thaw the Barley Pilaf and place in serving bowl. Add celery and onion and mix gently. Add vinaigrette and gently toss.
Serves 4-6.
Turkey Caesar Salad
Leftovers from MagicKitchen.com Roasted Turkey Breast
2 hearts of romaine, washed, dried and cut into bite-sized pieces
Caesar croutons to taste
1/2 cup of mayonnaise
2 garlic cloves, minced or put through a garlic press
2 Tbsp lemon juice
1 tsp Worcestershire sauce (optional)
Place lettuce in bowl, making sure it is dry. Chop turkey into bite-sized pieces, and add to bowl (discard or use skin according to your tastes). Add croutons. Mix remaining ingredients separately, then pour onto salad. Toss and serve immediately.

1/2 small red onion, finely diced
3 Tbsp. Cider Vinegar
3 tablespoons good olive oil
1/4 teaspoon salt
1/2 teaspoon freshly ground black
pepper
1/2 cup julienned fresh basil leaves
Thaw the Corn Medley overnight. Toss the corn in a large bowl with the red onions, vinegar, olive oil, salt, and
pepper. Just before serving, toss in the fresh basil. Taste for seasonings and serve cold or at room temperature.

Mashed Potato Salad
Serves 4
4 servings of MagicKitchen.com Mashed Potatoes, thawed
2 boiled eggs, chopped
1/2 tsp. mustard
2/3 tsp. mayonnaise
1/4 c. bell pepper, chopped
1/4 c. onion, chopped
2 tsp. sweet pickle relish
1/2 tsp. salt to taste
Mix all ingredients together. Serve at room temperature.
Chicken Teriyaki Salad
Teriyaki dressing:
¼ cup Teriyaki sauce
2 Tbsp Wine vinegar
1 Tbsp Salad oil or Sesame oil
⅛ tsp Ground ginger

1 small can baby corn, drained
1 can mandarin orange slices, drained
1 head romaine lettuce, cleaned and chopped into bite-size pieces
2 scallions, sliced thin
Slice the chicken into strips.
Mix chicken, lettuce and baby corn in a bowl and toss with the dressing. Gently toss in the orange slices and serve.
